The tropical flavours might have you thinking Summer but the warm spices and pumpkin gives me all the Fall vibes. This single serve hack is not only delicious but filling and will give you the energy to tackle your busy Fall mornings.
Here's how
1/2 cup HelloAmino Your Dream Muffin mix
1 whole large egg
1 tbsp canned pumpkin or grated carrots
1/4 cup crushed pineapple
1/2 tbsp shredded coconut
1/2 tsp vanilla extract
dash nutmeg
1/8 tsp cinnamon and ground ginger
Optional topping
1 tbsp HelloAmino Icing mix
2 tsp milk
Mix all ingredients together and bake in a greased 8oz ramekin in the air fryer at 320 for approximately 11-12 minutes.
Mix the icing ingredients until smooth and drizzle over.
