Mini Egg season is officially here. And if you’re like me, you know how tempting it is to give in and indulge. But here’s the thing: If you think you can’t enjoy Mini Eggs and still hit your protein goals, I’m here to prove you wrong.
My favourite weight loss hack? Eating the things I love, without guilt. 🙌 Let’s talk about how balance—not restriction—should be your go-to approach for your wellness journey.
Mini Egg Protein Cheesecake Recipe
I get it: You want to enjoy your favourite foods without sabotaging your progress. That’s why I created this Single Serve Mini Egg Protein Cheesecake. It’s the perfect sweet treat that’s also packed with protein. This recipe is no-bake, super simple, and incredibly satisfying.
Ingredients:
1 ½ tbsp whipping cream
2 tbsp HelloAmino icing mix
2 tbsp light softened cream cheese
Splash of vanilla extract
4 mini eggs, crushed
1 tbsp 0% Greek yogurt
1 ½ tbsp HelloAmino chocolate pudding mix
½ large graham cracker, crushed (GF if needed)
½ tsp melted butter
In a small glass whip whipping cream until soft peaks form. Whip in HelloAmino icing mix and vanilla and then add softened cream cheese. Beat until smooth (I used our milk frother which takes a bit of work to break down the cream cheese but eventually provides a nice smooth texture).
In a small dish combine cookies with butter and then press into dish of choice (I used a silicone mold). Pour over cream cheese mixture and freeze for 30-45 minutes until firm.
Mix together yogurt and HelloAmino chocolate pudding mix. If using a mold, unmold onto a plate and top with yogurt.
