Carrot Cake Protein Overnight Oats

Carrot Cake is my all time fave dessert and this recipe will not disappoint. The perfect breakfast that tastes like dessert but packed with 38g of protein to keep you full all morning long!
1/2 cup quick oats
1/2 cup skim fairlife milk (any milk will do but this is the highest in protein)
3 tbsp HelloAmino Chai Latte mix
1/4 tsp cinnamon
1/8 tsp nutmeg
2 tbsp finely grated carrots
2 tbsp cream cheese, softened
1 tsp plain Greek yogurt
1 tsp HelloAmino Vanilla Pudding mix
1 tsp skim fairlife milk
10g dark chocolate
1/2 tsp coconut oil
Optional toppings: pecans and toffee bits
Mix the first 6 ingredients together and add to a small dish. Mix the next 4 ingredients together until smooth and layer on top of the oats.
Melt the chocolate in the microwave at 10 second intervals until smooth and pour over the cream cheese layer.
Garnish with nuts and toffee bits if desired.
Refrigerate overnight.
