Biscoff Protein Pumpkin Pie for One

For a delightful protein packed pumpkin pie experience in a single serving, this simple recipe will fulfill all your pumpkin pie cravings! With 16g of protein it doesn't get any better!

Crust

2 finely ground Lotus Biscoff Cookies 
1/2 tsp melted butter
dash salt

Filling

1/4 cup HelloAmino Vanilla Pudding Mix
1/3 cup milk of choice
1/4 tsp pumpkin spice
1 tbsp pure pumpkin

Preheat air fryer to 320. Combine first 3 ingredients and press into a ramekin. Bake for approximately 3 minutes or until golden. Set aside to cool.

In a small pot combine the first 4 filling ingredients. Cook over medium heat for 3-4 minutes stirring continuously until smooth and thickened. Add in the pumpkin and stir until smooth.

Pour into the ramekin and then place in the fridge to set for at least 1 hour. 

Top with whipped cream and garnish with nutmeg and cinnamon
