Protein Viral Olympic Chocolate Muffin

Ever since Henrik Christiansen from Norway gushed about his obsession with the chocolate muffins at the Paris Olympics social media has been going crazy for them.

I couldn't resist creating a HelloAmino version and these did not disappoint!

Rich with both milk and dark chocolate and stuffed with our chocolate protein pudding, you'll fall in love with these and get 18g of protein! 

Start your day with one or end it as dessert!

Here's how

1 package HelloAmino Your Dream Muffin mix
2 whole large eggs
1/3 cup/90g butter, melted
1/2 cup Dutch cocoa
3/4 cup 2% plain Greek yogurt
1/4 cup 2% Fairlife milk
70g Hershey's dark chocolate chunks
60g plain milk chocolate bar, chopped into chunks

Filling
1/2 cup HelloAmino Chocolate Pudding mix
2/3 cup 2% Fairlife milk
10g Hershey's dark chocolate chunks

Preheat oven to 425

In a large bowl combine, eggs, yogurt, milk and then slowly whisk in melted butter. Add in cocoa and HelloAmino Your Dream Muffin mix and stir well until fully combined. 

Fold in both chocolate chunks leaving a few pieces to top each muffin.

For best results using silicone muffin liners* fill every second muffin tin (leaving a space between) nearly full. Top with 2 chocolate chunks and bake at 425 for 5 minutes only. 

Reduce temperature to 350 and bake another 8-9 minutes. Let cool 5 minutes in tray and then remove to let cool a further 15 minutes before filling.

While muffins are baking prepare pudding.

In a small pot mix together the pudding mix and milk over medium heat stirring continuously with a silicone spatula to smooth out the lumps. Cook until just before boiling and the pudding has started to thicken and coat the back of a spoon.

Remove from heat and add in the dark chocolate and stir until fully melted. You can omit this step but it really adds to the depth of the filling.

Pour pudding into a small dish and cover the surface with cling film to prevent a skin being formed and let cool.

When muffins are cool to touch. Using a piping bag, fill it with pudding and insert into the middle of every muffin, filling the center and adding a dollop on top of the muffin itself.

Enjoy immediately or store in the fridge well wrapped for up to 3 days. Bring to room temperature before enjoying.
