2 cups HelloAmino Cinnamon Pancake Mix
2 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground nutmeg
dash of ground allspice
1/4 cup white sugar (don't skip, this helps with structure and moisture)
1 whole large egg
1 large carrot, grated
57g melted butter
1/3 cup 2% milk (I used fairlife)
1/2 cup 2 % plain Greek yogurt (I used lactose free)

Make according to package instructions using cream cheese.
Preheat oven 350
In a bowl mix together the first 6 ingredients. In another bowl whisk together the remaining (egg-yogurt) ingredients. Add the dry into the wet and stir until fully combined.
Pour into a 8x8 greased cake pan and bake for 22-24 minutes or until toothpick comes out clean and it's lightly golden.
Let cool at least 15 minutes before removing from cake pan and then allow to fully cool before icing.
Slice into 9 pieces.
