Mini Protein Cookies

I love anything mini. There's just something so cute about little versions of things that has me obsessed.
As we're approaching market season, we decided we wanted to offer samples of our protein baking, which meant making smaller versions. We first started by make mini brownie bites and then I baked up a batch of mini cookies which turned out so good!
Mini cookies are great if you want to cut back on the calories and still have that sweet treat. While our full sized protein cookie can still easily fit into my nutrition goals, sometimes I want something smaller.
A mini sized version is about 1/3 of the size of our full cookie, weighing approximately 14g vs 40g raw. Which makes it approximately 60 calories with 4.5g fat, 8.5g carbs and 5g of protein.
Here's how you do it.
Make a full batch of our protein cookies and use a small 1.18 inch cookie scoop to divide the batter into approximately 36 mini cookies.
Bake at the directed temperature for 6 minutes. Let cool at least 15 minutes.
