Raspberry Protein Cheesecake (no baking required)

I grew up with a no bake cheesecake and it's one of my all time favourite desserts. This high protein version is every bit as good as my Mom's recipe and is great for Summer entertaining.
Here's how⤵️
Serves 6
1/2 package HelloAmino vanilla pudding
1/2 cup softened cream cheese
10 biscoff cookies or GF graham crackers
Coconut spray
250g fresh raspberries (any berry works)
1 tbsp vanilla extract
1 tbsp water
Prepare the pudding according to package instructions. While warm mix in the cream cheese until fully combined.
Crush the cookies and add to a 9x9 cake pan. Coat lightly with coconut oil spray.
Pour pudding mixture over cookie layer.
In a small pot add raspberries and the next 3 ingredients. Cook over medium heat for about 5-7 minutes or until a thick sauce is formed.
Pour over pudding and refrigerate for 2 hours.
