That's right you can now have your favourite birthday cake flavour in a delicious protein cookie!
With just a few tweaks to our popular Birthday Cake Pancake Mix you can make a batch of moist and chewy cookies with all the sprinkles!
2 cups HelloAmino Birthday Cake Pancake/Waffle mix
170g unsalted butter, room temperature
1 large whole egg, room temperature
2 tsp vanilla
1 1/2 tsp oil (vegetable, canola or coconut)
1/4 cup white sugar
Preheat oven to 350.
In a medium bowl combine sugar with egg, oil and vanilla. Add in butter and stir to combine. Lumps are OK. Add in the pancake mix and using a sturdy wooden spoon mix together until it's fully combined and no butter clumps remain. Alternatively beaters can be used.
Line a baking tray with parchment and scoop out 12 equal sized cookies in total but bake no more than 6 on the tray at one time.
Bake for 10-11 minutes until edges are lightly golden and center no longer shiny. Let cool at least 5 minutes on tray before fully cooling on wire rack.
Store well sealed or freeze for later.
